Hunan cuisine (Ïæ²Ë xiang1 cai4) is widely known around China for its spicy dishes which often use fresh chilis and "dry woks." Æ®ÏãÅ£Èâ piao1 xiang1 niu2 rou4 Piaoxiang Beef is a dish where small cutlets of beef are cooked with cumin spices in a dry wok. It is not one of the spiciest Hunan dishes, but still packs a bit of a punch.
¸É¹ø¼¦ÔÓ gan1 guo1 ji1 za2 ÔÓ (za2) is the Chinese character for "miscellaneous" or "mixed" and as the name indicates, you never know exactly what you are going to get when you order "Dry Wok Miscellaneous Chicken." In this spicy dish, random chicken parts are fired up on a dry wok with red peppers and cilantro, and served flaming hot to your table.

Although it's not technically cooked in the style of Hunan cuisine "Mao-Style Red Cooked Pork" is proudly served in Hunan restaurants because it is the legendary favorite dish of Hunan's most famous resident, Mao Zedong. Unlike the dry spicy dishes typical of Hunan cuisine, in "Mao Style Red Cooked Pork" slices of pork fat are cooked with potatoes and brown sugar in a thick, sweet sauce without any spicy flavoring.

The ¿à¹Ï (ku3 gua1) or bitter melon may be the most bitter edible substance known to man. It also has powerful body cooling properties according to Chinese Medical Theory. Bitter Melon Soup may not be the best dish to order for the uninitiated, but if you can take the bitterness, it provides a nice balance to spicy Hunan dishes.
